Falafel, veggies, and wierd weather

I want to tell everyone thank you for all the kind words you have posted. Everyone made Brandie feel so good! It is awesome to have blogging buddies.
We had the freakiest weather today. I know that most of you live where you have been buried in snow this winter, but here in southern California we live in very boring weather. We had an unusual storm hit us. Winds hit 35mph on the coast and up to 75mph in the mountains. Our family happens to live very close to the mountains so we get a little bit of variation in our weather. Well the winds were a blowing and we were in for a very blustery day. All of a sudden the Heavens opened up and the hail came down. It came down in buckets. By the time I thought to get the camera it started to melt, but I did get this shot. I know it doesn't look like much, but it is now documented that we had hail. :o)
Ok, enough weather news.
On to food.

Tuesdays and Thursdays I have pool therapy for my back and after therapy I am done for the day. I am sore, tired, and just wiped out. Dinner tends to be a struggle for me on these days.



So I put a big pot of brown rice on, which I cooked with No-Chicken broth . I steamed some green beans, a bag of frozen mixed vegetables (cauliflower, broccoli, carrots, and peppers), and some frozen green peas. I quickly made some falafel patties and fried them in my non-stick pan with a tsp of olive oil. It was a very good meal. I heated up some BBQ sauce to use as a dipping sauce for mine, which I loved and Brandie used some leftover Caulifredo sauce on hers. Dinner was a hit and I got to teach Brandie how to make falafel patties. Thanks to everyone for stopping by and I hope I didn't bore you with my less than fantastic weather report.

Wow, you got hail! I have been off for spring break this week as I work in education, the weather has been surprisingly gorgeous and even reached almost 80 yesterday. Unusually nice weather, but after what we have lived through we are NOT complaining.... clean up of all the downed trees and big branches is still happening though (we have five properties to clean up, two are complete). Healing and clean up work is what I have been "breaking" on.

Are you using Dreena's falafel recipe?

I am glad you have had some better weather. Wow! 5 properties, only in my dreams. Property is unreachable in Southern California. I don't know why they make it so rough on folks. The income does not equal the cost of living. Last report my husband heard was that only 10% of those living in San Diego County can afford a home.

I cheated and used Fantastic Falafel dry mix. I need to get some garbanzo beans.

At least the hail is a change from the norm…even if it’s not a welcome one!
I think that meal looks great! Sometimes I could just eat a whole plate of veggies for dinner, but I don’t think my hubby would be too happy if that’s all he got! :)

Your falafel meal looks great! I love Susan's cauliflower sauce and your garlicky version looks super.

Sheree, my parents said it hailed by them (San Diego also) when i was at work last night. SO NUTTY!!!

I have to try the butter flavored extract... I adore coconut extract and other ones, so this should be an interesting addition to my kitchen.

Scottishvegan - My DH loves raw veggies. He is always telling me throw them in a salad!

Atexvegan - We love garlic and it was garlicky, but won't change a thing. ;O)

Kleo - It was really weird weather. We live in East County how about your parents?

Mel - I have to come to your house for dinner too! I have had the butter flavor extract for years and never thought to use it. Brandie thought of that idea. The young aspiring chef.

that IS freaky So Cal weather! Hubby works there during the week and told me about the winds... The food is looking delicious!
