We are still cleaning out the fridge before shopping day. We had left over *meetloaf*, steamed cabbage with carrots and onions, frozen peas, baked potato with earth balance and a green salad with organic grape tomatoes that are awesome! Can you say comfort food?
Last but not least we had the last of some cooked black beans in tacos. I know it is hard to see them through all the veggies, but the black beans are there. I found these great corn tortillas by "Food for Life" They are sprouted corn tortillas and they have fantastic flavor! The tacos are filled with black beans, tomatoes, shredded carrot, and avocado. I made up some Spanish rice in my rice cooker. I used brown rice added some green bell pepper, tomato, and a can of green chilies. Instead of cooking the rice in water I use the "NO-CHICKEN" broth. This stuff is great, even DH who has never liked Spanish rice enjoyed it!

Some of the best stirfries seem to come when cleaning out the fridge, and the best dinners from leftovers! The tacos look great in those sprouted shells and WTG on making a tasty spanish rice. I'm glad you're still feeling up to a little cooking.

Tx - Thanks! I am excited about getting back to cooking. I got the sprouted corn tortillas at Whole Foods and they are my new found favorite. They taste alive. I love them. I probably did a bit to much cooking this weekend, but I sure did enjoy myself. Therapy will be very welcomed tomorrow.
Tofu mom - Isn't it great that we can visit other blogs and get ideas for our next meals. I don't know where I would turn if I didn't have such great people with great vegan ideas!
