T.G.I.F. Seems like it has been a long week, which brings me to our go to meal. Quick and easy!
I use Garden of Eden pre-made blue corn tortillas. They take 2 minutes to heat up in the oven and they taste great. These are stuffed full of refried black beans, some ground seitan, veggies, and guacamole. The only problem with these is we could eat a dozen. :o)
Now it is time to go to bed and dream of what is to come in the kitchen next. Sleep tight and don't let the bed bugs bite.

I've been seeing a lot of great tacos lately, but haven't had any myself. must work on that soon.

Those Blue Corn Tortillas are soooo pretty.
I've never seen them in the shops before.
I don't think I have seen blue corn taco shells either... tortilla chips, yes.. but not taco shells. They look awesome, though! Love the chunks of avocado and tomato!!

Tacos are our go-to easy meal as well. We use those same blue corn tortillas, aren't they great?? My kid will only eat tacos if they are in "purple" shells!!

when I do crunchy tacos, Andy does eat at least 6 of them. He will try to have taco night every night.
