VeganMoFo Day 26 Wanna go on a boat ride?

It would be a blast if we could all get together for a super duper vegan boat ride, but for now we will have to enjoy a zucchini boat ride. :o) I have a some really nice zucchini and wanted something different than steamed or stir fried. I changed around the normal recipe to stay away from bread crumbs and Earth Balance. The filling for my boats consisted of diced onion, zucchini, a Field Roast Italian sausage, and about 1/4 cup of cooked brown rice. Once the filling was cooked and the veggies soft I added a small bit of marinara sauce. I pre-cooked my boats to speed up the process. What can I say I was really hungry. Once the boats were filled with goodness they were sprinkled with a tiny bit of vegan Parmesan and a very thin slice of Follow your Heart mozzarella cheeze and placed under the broiler. Served up with steamed broccoil and a nice bowl of fresh fruit salad this dinner really hit the spot.

what a healthy dinner! i love zucchini, it is probably one of my favorite veggies ever.

That looks like such a great combo. Everyone has been talking about Field Roast lately and I have to get my hands on some.
This different idea for zukes sounds soo yummy.

Ew ew loved the reindeer. And I saw something about Falafel(sp?) and I saw an episode on the Planet Green Channel and Emeril has a show where he has paired up with Whole Foods. And may oh my.

He did an episode with nothng but Middle Eastern food. I canno remember if it had a meat dish, but for the most part it was vegetartian dishes. Well, he made a from scratch falafel recipe. Easy schmeazy.

I have yet to try it, just been lazy. Once I try it, I will have that puppy posted so all can enjoy.

Thanks for the boat ride! ;) I just grilled 5 little zucchinis yesterday and have 2 left.
