VeganMoFo Day 27 Light and easy

It's a hot one tonight folks. They say our Santa Ana should break by Wednesday and am I ever ready. Bring on the fall weather or at least at close as we can in the San Diego area. I so miss cool temps and colored leaves. I guess that's the price we pay to live here and boy, do we pay the price. Even DH wanted a salad tonight. Not that he is not a salad eater he loves them, but he went without lunch and I figured he would be really hungry. He settled for a very small portion of leftover spaghetti and the salad. Spaghetti was too much for me and I opted for beans. Quick and easy. Of course veggies were included. It always kinda bums me out when I cook up a big pan of spinach and look whats left. Yes, that is the the whole pan I didn't even give any to DH. :o)So sad. Now I know why frozen spinach is so expensive.


Can you believe Mofo is almost over? Tomorrow is shopping day and a Halloween party at church. I will try and get some pictures since it is a baked potato bar vegan eating should be pretty easy. I am making steamed broccoli and a yeasty cheese sauce. :o)

Please please please may I trade with you? Ironically enough, I was just saying, this morning, that I wanted to move to either Tampa or San Diego. It's going to be in the 30s tomorrow morning, here in Texas! Who says Texas is always hot?!

I know what you mean about the spinach. It takes so much to actually make a decent serving of the stuff.

It's COLD here, I wish I could send you some of our weather in exchange for yours!!!

I used to live in MI and I sure do miss the changing leaves in the fall, but I could never give up sunny AZ.

We have the opposite today. It's almost summer and it's icy cold tonight!

That dinner looks yummy! And spinach always makes me sad too. I'm embarrassed to say, that once cooked, I can eat an entire bag to myself *blush*

In Spain we only really have two seasons - summer and not summer!

More amazingly colorful food! It's been getting quite cold here but it's a nice change from the brutal summer heat. Enjoy your Halloween party!

I will definitely trade with you! It's not getting out of the 30s today and we are in the middle of a snow storm. A town about 20 miles away from me has nearly a foot of snow already!!! Yuck.

It's hard to imagine warm weather right now.. we are in the peak of fall and foliage and it's cool and stunning in New Hampshire!.. In fact, I think I need to make that super spicy chili you posted in your last post! I'm impressed with the heat! woohoo!
