So as not to interrupt a day of Vegan MoFo I bring you a salad. We had our grandson to day and sorry to say he had center stage. :o) By the time we realized it was dinner time, this Gama was ready for a dinner that was quick, nutritious, and easy. That in itself can only be described as yummy, filling, salad. A quick trip to the fridge, limited chopping, some quick roasting of walnuts dinner was served.Simple and yummy this salad was a mix of romaine lettuce, tomatoes, green onions, cucumbers, mango, avocado, toasted walnuts, and a quick Asian flavored dressing.
And now, Jr. and I would like to wish you a good time in the kitchen tonight! :o)

I love salads for dinner. If you add enough to it, I don't think you need to eat anything else!

What a cutie you've got there, and I love that bib he's wearing!!
There's nothing wrong with salad, I'd eat 'em all the time if I could get my family to go along with that!!
Sometimes a salad will just hit the spot! Especially when you're in a pinch for time.
