Here is one of my all time favorite go to lunches thanks to Lindsay. Mock tuna that is made with garbanzo beans in place of the tuna with vegetables of your choice. This batch was made the traditional way with onions, celery, and sweet pickle relish. It is so good!

I love mock tuna fish salad! One of my very favorite things to eat...in fact, maybe I will have it for lunch today. Love that last photo!

I haven't had many mock tunas I've liked, but Lindsay's version with chickpeas sounds really good.
