Finally on the mend and chickpea patties!

Hi everyone! First, thank you all for your kind thoughts and concern. I hope I never have to go through anything like that again. I am still cautious, but as you can see my meal has evolved from cream of anything to something I can sink my teeth into. Our Library finally got V-con in and I was the first to check out the copy. I love the chickpea patties. I know the picture is lousy since me and my iron skillet had issues, but it did not change the taste of these yummies! I also made the herb potatoes, which are similar to scalloped potatoes. They are easy and take no time at all. Lots of wonderful spices. DH love them. OH, the chickpea patties are even better the next day. I will cherish this recipe.



Update on Brandie. She has 5 weeks to go. Her baby shower was yesterday and it was nice. Sadly to many people were not able to make it, but we enjoyed. She has been having some labor warm ups, which back in the day we called them Braxton Hicks. The midwife told her to keep an eye on them because if she goes into full labor in the next 9 days she can't birth at the birthing center. They consider her premature before then. They are not consistent so that is good. We are praying for no labor for the next 10 days just to be sure. She so badly wants a natural water birth.
I promise more yummy food now that I can eat.

I'm sure Brandy will have a lovely natural water birth! I'll definitely light a candle for you all... ( I light candles every night for people and this world and all the animals)

It's nice to hear you're feeling better! Getting my wisdom teeth out was awful ... I'm glad it can only happen once! :) The chickpea patties look fantastic.

yay for solid foods and hugs for feeling well again! :) the chickpea cutlets rock - i'm glad you like them and realized that they taste better the second day. lots of bloggers write the cutlets off because they eat them fresh, and i'm always like, "no! try them as leftovers and you'll change your mind!"

i am so excited for you and your family for your new arrival! I hope she gets to do the all-natural child birth in water. I have heard nothing but wonderful things about it. If I ever decided to have children, I would be on board with the natural water birth! I will send positive energy her way!

I'll be hoping that labor holds off for Brandie!! A water birth sounds like such an amazing experience! YOu must be getting super excited to be a grandma...

I agree with you vegan orange chicken is the best! The VegNews issue I found the mac 'n cheese recipe from is the one with the big collard leaf on the cover and the article about raw food (sorry, I don't know what month that one was in).

Congrats on the soon-to-be new addition to your family!! Glad to see you are back blogging!!
I love the chickpea cutlets, as well. I triple or quadruple the batch and freeze them. Then when I need to throw a quick lunch together to take to work... a frozen patty or two, a bunch of frozen edamame or other veg go into a container. Everything is thawed by lunch time and I am a happy camper!!
