VeganMoFo Day 2 and Split Pea Soup

Today's dinner was by request. DH and I have been together for over 32 years and it took me at least 20 of those years to convince him that Split Pea Soup was delicious. He always said the same thing, "Looks like baby poop" and I would respond well, it doesn't taste like it. :o) One day at a restaurant he ordered it instead of salad and loved it. Too bad that meal ended badly with glass in his soup. Since then I am the only one that makes his soup. I know many of us and many omni's still believe that you need that ham hock in there to make good soup, but I am here to tell you that you don't. My recipe is simple and the only thing I measure is the amount of dry peas. Of course corn bread is fantastic with it. Perfect Autumn meal. Enjoy!



Simple Split Pea Soup
Serves 2 -3

6oz of dry split peas (I mix yellow and green)
1/2 onion, chopped
1/2 carrot, diced
1/2 celery stalk, diced
2 cloves of minced garlic
1/2 medium potato diced
About 3-5 cups of vegetable broth ( I use "No Chicken" Broth)
Salt and pepper to taste

Spray bottom of 3 quart pot with cooking spray or use 1 tsp of olive oil. Saute your onion, celery, and carrots until semi tender. Add the garlic and stir for about 1 minute. Add in the potato, peas, and enough broth to cover the peas. Bring to a boil, cover, and simmer for about 45 minutes. I stir mine about every 10 to 15 min adding more broth as needed. Once the peas are soft and the veggies are cooked I use my hand blender or "boat motor" as it is called in our home, to puree the soup. A blender will work well also. Next serve it up and enjoy!
Whats for dinner tomorrow night? I am playing with the idea of using sauerkraut, but how? :o)

I make a good one too but I add Vegan Bacon in mine - you should try it!

As for sauerkraut, I could eat it straight up...

Vegan Dad has a great Reuben corned beef seitan recipe. I actually make reubens without the meat, since with the dressing and kraut, you can't really taste it anyway!

I will definitely be making this! I am in total agreement about the ham hock not being necessary. I've been searching for a good split pea soup recipe, I'll have to try out yours. It sounds delish!

My southern family always used hamhocks! I love your recipe and hope it cools off here soon so I can make it.

About pierogies - I buy them premade and frozen in a box of 12, usually in the ethnic section of the freezer.

Ham hock... Ugh! Who made up the rule that soup needs rotty old bones for flavor?! I'm in a cooking class at school right now and seriously, practically every recipe in our textbook includes some sort of animal remnant...

But your split pea soup sounds clean, simple, and delicious!
