VeganMoFo Day 7 Need a wrap anyone?

Today was a fast paced day and I still got something accomplished. Quick post since it is 10:40 pm and 4:30 am comes way to quick. What can I say we had to sit in front of the tv and veg. lol
I got up this morning with a plan ahead of me. "Meetloaf", it has been quite sometime and that was what I was craving. If you haven't used the Magic Loaf Studio over at Jen's Vegan Lunch Box you should go for it. Today's was tasty, but didn't firm up like my other combinations. I think it is due to the freshly cooked quinoa. Yes, this is one protein powerhouse loaf. Black beans, quinoa, walnuts, and flax meal. My purpose in making this was to have a meetloaf sandwich, or at least that was the plan. So the "meetloaf" is done, I let it cool and I put it in the fridge. Great! There is no bread. Hmm, I have wraps. Solution to my problem. Here is my wrap filled with carrot ribbons, Romain lettuce, meetloaf, and hummus. Perfect combination of crunch with the very tender and moist loaf. Need I say more. :o)

No Bread? No problem. Here it is fresh from the oven.

I used 2 cups of whole wheat flour and 1 cup of whole wheat bread flour for this one. Threw in some 7 grain cereal, olive oil, water, yeast, salt, sugar, and away we go! Too late for todays sandwich, but there is always tomorrow.

Finally, whats for dinner? Why "meetloaf" of course along with a huge salad, and corn.



My tummy is full and the eyes are droopy so it is time to hit the hay!

Mmmm YUM! I've only made one loaf from there but it was delicious. I really should make another. Yours looks yummy!

Yes, I need a wrap! And bread, too. Sounds like a great day, foodwise. Oh and I've also used that loaf studio, too. I think I spent an hour to figure out all the different combinations I might like.

I have used the loaf studio and every time it has turned out great! I might have to make "meetloaf" now, too!

I've never used the loaf studio, but it looks pretty cool. I think a meetloaf is coming soon to a kitchen near me...

I will have to try the magic loaf studio. It sounds interesting. The meatloaf you made looks delicious. I am 38 weeks pregnant with our second son, so I have been making easy dishes I can freeze for later. By the way, your grandson is beautiful.

Wow - have always wanted to try the magic loaf studio, but haven't gotten around to it yet. And homemade bread - looks great.

You always bake the best breads! I haven't had such great loaf with Magic Studio, but it sounds terrific in a wrap.

I played around with at a long time ago, but never though anybody made them. wow, I'm impressed at how daring you are. Loaf looks good. Never thought to have it in a burrito. I'm learning a lot today ;-).
