VeganMoFo Day 28 Mini sandwiches

Hi everyone, sorry no pictures from the potato bar, but let me tell you the line was long and by the time we got to the table all that was vegan was a potato. Luckily Brandie and I had brought Earth Balance and some nutritional yeast. I did take a picture of a fun lunch earlier. These little mini rice cheese sandwiches are made from some mini rolls I made earlier this week. They are about as big around as a very small juice glass. :o) I just cut them in half, then cut the rice cheese with the little juice glass and gave them a quick fry. Hey like silver dollar sammies. I wanted to cut out a face and make it like a mini jack-o-lantern, but alas, too hungry.

I should remember to bring EB with me the next time I know my only option is a baked potato! Great thinking.

Oh, and love the casper costume!
